This handmade fresh egg pasta is source of pride of the Langa gastronomy.  We solely use high quality raw materials, such as yolks of barn eggs and flours from our farmers. In this case, squid-ink is added to create a delicious combination which can be tasted with our seafood pasta sauce or simply with a knob of butter.

TRUFFLE TAGLIOLINI
Our truffle tagliolini are produced following the older traditions of the refined gastronomy, offering a product of undisputed quality. This apparently ordinary food is a source of wisdom and expertise completed by the delicious truffle which has the power to raise the spirit of the gourmets. This pasta may be tasted with our white truffle red pasta sauce or with our white truffle Genovese pesto in order to enhance the truffle flavour in a unique plate! EGG TAGLIOLINI
Tagliolini are a variety of egg pasta typical of Italian cuisine well-known in Piedmont as “tajarin”. Their size is similar to tagliatelle but they have a width less than ½ cm: in fact, their width is 3 mm. The history of tajarin comes from the wide expertise of grannies in their kitchens who had tested the magic formula which turns water, eggs and flour into this golden food known all over the world. They are perfect with meat or game sauces or with light vegetable sauces. They give their best with truffle, with a taste explosion of the king of Langa: you have to try them with a knob of truffle butter or with our white truffle or summer truffle creams.

5-FLAVOURED TAGLIATELLE
Green of spinach, red of tomato, orange of turmeric, claret from beetroot and durum wheat flour. Five colours and five tastes give to this pasta a special flavor and a tempting visual impact.
