Fresh red onions create a perfect combination with the balsamic vinegar of Modena. It is perfect to match with matured cheeses, Castelmagno, Gorgonzola cheese, Parmesan, goat’s cheeses. Thanks to its full-bodied taste, it is ideal not only for meat dishes, such as filets, escalopes, baked pork meat or smoked beef, but also for baked fish, such as bass, swordfish or salt cod.
